Malvani Masala


Time: 20 Minutes



Ingredients:

1) ½ kg Red Bedgi chillies
2) ½ kg Red Sankeshwari Chillies
3) 500 gms Coriander seeds
4) 125 gms Black Peppercorns         
5) 50 gms Cinnamom
6)  50 gms Cloves
7) 50 gms  Star anise
8)50 gms Black Cummin Seeds
9)  50 gms Mace
10) 50 gms  fennel
11) 50 gms Mustard Seeds
12) 50 gms Poppy Seeds
13) 50 gms Black Stone flowers
14) 50 gms Bay leafs
15) 25 gms green Cardamoms
16) 2 & ½ Nutmeg
17) 50 gms Turmeric Sticks
18) 50 gms Asafoetida
19) Oil






Method:

Heat pan on a lower flame add oil and roast cleaned chillies until light brown and aromatic.

Once it turned into crisp keep aside.

In a same pan add little oil and add rest of spices except turmeric sticks, asafoetida and nutmeg.














Roast all spices until fragrant and crisp, keep starring.

Transfer all spices into a plat and allow to cool.

Grind above mixture and make a fine powder.
