Vangi Poha / Eggplant Poha

Serves for 2.
Ingredients:
1) 2 Cups
poha
2) 2 small
brinjals
3)2 tsp oil
3)2 tsp oil
4)1/2 tsp cumin seeds
5) ½ tsp Mustard seeds
5) ½ tsp Mustard seeds
6) ½ tsp turmeric powder
7) Curry Leaves

8) Green Chillies
9) 1 cup chopped onion
10) Coriander Leaves
11) Lemon
12) Salt as per taste
Method:
Wash and soak
poha.
Add turmeric
powder and salt and keep aside for 10 minutes.
For tempering
add oil in a heated pan add mustard seeds once it started to crackle add cumin
seeds, curry leaves, green chillies, and chopped onion.
Once onion
turn into golden brown add brinjal slices and put lid and let it cook for 5
minutes.
Add poha stir
it.
Let it cook
for another 5 minutes on low medium heat.
In a serving
plate add poha, lemon juice and garnish with coriander leaves.
