Kajuchi Patal Bhaji | Kaju Curry

Ingredients:

1) 1 cup Cashewnuts 
2) 1 Onion
3) Turmeric powder
4) Khada Masala
5) 5-6 Curry Leaves
6) Ginger Garlic Paste
7) ½ cup dry coconut
8) ½ cup oil
9) Coriander leaves
10) 2 tsp  red chilli powder
11) Salt as per taste

Khada masala:

1) 1 chinnamon 
24 black pepper   
3) 2 clove
4) 2 pinch poppy seeds 
5) 1 star anise
6) Green cardamom
7) Cumin seeds

Method:

Soak cashew nuts for 1 hour in warm water. So that they will turn into soft.

Heat oil in pan add curry leaves, add ginger garlic paste and chopped onion once it turn to golden brown.

Add red chilli powder and stir it.

Another side heat another 1 tsp of oil add onion and all khada masala sauté them till onion become translucent and keep aside let it cool down.

Once it cooled, grind into smooth paste.

Add above paste to above onion sauté till you get nice fragrance of the whole spices.

Once oil separated from paste add cashew nuts and salt.

Stir it and add little water. Let it simmer for another 5 minutes.

Serve hot with chappati.
