Kajuchi Suki Bhaji/Cashewnuts Veggie

Serves for 2.

Ingredients:

1) 1 cup cashewnuts
2) 1 onion
3) Turmeric powder
4) 2 tsp malvani masala
5) 5-6 Curry leaves
6) Ginger garlic paste
7) 1 cup grated coconut
8) 2 tsp oil
9) Coriander Leaves 
10) Salt as per taste.
Method:
Soak the cashew nuts in warm water for 5-6 hours.

Peel of the skin before making it.

Heat oil in pan. Add curry leaves, ginger garlic paste and chopped onion.

Saute till the onion turns into dark brown and oil get separated from it.

Add cashew nuts stir it.

Add turmeric powder, malvani masala, salt, little water and saute for 2-3 minutes.

Other side prepare the coconut paste.

Heat oil in pan add chopped onion till turns brown. Add grated coconut and roast till the mixture turns light brown.

Keep aside once it cool grind into a thick paste.

Once the cashew nuts are cooked add coconut paste and stir it, and cook for another 5-10 minutes.

Garnish with coriander leaves.

Serve hot with chapatti.
