Kothimbir Vadi

Ingredients:

1) 1 cup Chopped Coriander Leaves
2) 1/2 cup dry coconut
3) 1/2 cup coarsely ground peanuts
4) 1/2 cup Chopped Onion
5) Red Chilli Powder
6) Oil
7) 1 cup Whole Wheat Flour
8) 2 tbsp Besan
9) 1 tbsp Rice Flour
10) 1 tsp lemon juice
11) 1 tsp sugar
12) Turmeric Powder
13) Salt as per taste

Method:

In a heated pan roast grated dry coconut and keep aside.

In a same pan add oil in a pan add chopped onion and fry till it turn into golden brown.

once it done add chopped coriander leaves and saute for a minute.

Now add  coarsely ground peanuts, coconut, red chilli powder, salt, lemon juice, sugar mix it and prepare stuffing.













In a mixing bowl take whole wheat flour, Besan, rice flour, red chilli powder, salt, turmeric powder, and little hot oil and make soft dough of it by adding water.



Make small pieces of the dough.

Roll each piece into circle shape spread spoonful mixture of stuffing on it.













Make a roll of it. Repeat the same procedure for remaining balls.


Dip fry all vadi until become golden brown.













You can also roast rolls on tava  before frying for more crispy.

Serve hot with fried green chilli.
