Kaju Katli


40 Minutes,
12-14 pieces


1) 1 cup Cashew nuts
2) 1/2 cup sugar
3) 5 tbsp water
4) 1 tbsp ghee 
5) 1 tsp cardamom powder
6) Silver Varakh


Take cashew nuts in a grinder.

Grind till cashew becomes powdered form.

On a low flame heat sugar and water in a tick bottom pan.

Grease a plate with ghee.

When all the sugar dissolved in a water, add the cashew powder.

Keep on stirring the mixture on a low flame.

Cook the mixture till 5-6 minutes till the mixture starts to come together.

Place all the mixture in a plate.

Add little ghee and cardamom powder.

When the mixture is hot enough to handle, then knead the mixture.

Flatten the dough and place it on a greased plate.

Place butter paper on top and then using rolling pin, roll gently the dough from all sides  till a thickness of 3-4 mm in the dough.

Remove the butter paper.  Garnish with silver varakh.

When it completely cooled, cut the cashew dough giving diamond shapes.

Remove the kaju katli with knife.

Keep in an air tight container.
