Red Pumpkin Bhaji

 Serves for 2. 



Ingredients:

1) ¾ kilo of Pumpkin
2) 1 Onion 
3) Turmeric Powder
4) 1 tsp cumin seeds
5) 1 tsp mustard seeds
6) 5-6 Curry Leaves
7) ½ Cup Grated coconut
8) 2 tsp red chilli powder
9) 2 tsp Oil
10) Coriander Leaves
11) Salt as per taste
12) ½ tsp sugar


Method:

Scrape out the hard skin of pumpkin and cut into slices.

Keep into water.

Heat oil in a pan add mustard seeds once it crackle add cumin seeds curry leaves.

Add chopped onion.

Then add chopped pumpkin and stir well. Sprinkle few water and cook covered until cooked.


Add turmeric powder, red chili powder and salt and finally sugar.

Turn off flame and garnish with grated coconut and coriander leaves.

Serve hot with chapatti.
