Vangyache Bharit

Serve for 2.

Ingredients:

1) 1 Bringjal 
2) 2  large chopped onion   
3) 1 small tomato  
4) Chopped coriander
5) 5-6 green chili  
6) Ginger garlic paste
7) 1/2 tsp mustard seeds   
8) Curry Leaves 
9) Turmeric powder
10) 1/2 tsp red chili powder 
11) 2 tsp peanuts 
12) Oil
13) Salt  

Method:

Roast the eggplant.

Heat oil into a pan. Add mustard seeds once its crackle add curry leaves, green chili, ginger garlic paste, and chopped onion.

Once onion translucent add peanuts and saute for  few minutes.

Add tomatoes and saute over high heat until mushy.

Let the eggplant cool down, peel it and take out the flesh and chop it.

Add eggplant flesh and salt to tomato.

Stir well until  oil starts leaving from the side.

Add coriander leaves and serve hot with Bhakri.
