Spinach Buttermilk Curry

Serves for 2.

Ingredients:

1)1 medium bunch spinach  
2)2 cups thick buttermilk  
3)1 tsp besan flour
4)1/2 cup peanuts
5) Salt 
6) Coriander
7) Turmeric powder


Tempering ingredients:

1)1/2 tsp ghee
2)1/2 tsp mustard seeds
3)1/2 tsp Cumin seeds
4) Pinch of Asafoetida
5) 4-5 curry leaves
6) 3-4 chopped green chili
7) Ginger garlic paste

Method:

Soak peanuts for 5-6 hours and pressure cook.

Heat ghee in pan add mustard seeds once it crackle

Add cumin seeds, asafoetida and curry leaves.

Add turmeric powder, green chili, ginger garlic paste. Then add boiled peanuts and saute.

Then add chopped spinach and let it cook over medium heat.

Once spinach is done, lower the heat and add butter milk and 1 tsp besan flour.

Keep stirring until curry start boiling. In the end add salt.
