Eggplant Slices/ Vangyachi Kaap

Ingredients:

1)1 Eggplant
2) Turmeric powder
3) Salt as per taste 
4)1 tsp red chili powder
5)1/2 tsp cumin powder
6)1/2 tsp coriander powder
7)1/2 tsp amchoor powder
8) Rice Flour or rava
9) oil for frying

 Method:

Wash eggplant and make thin slices of it. Keep them in cold water.
Mixed all ingredients (turmeric powder, salt, red chili powder, cumin powder, coriander powder, amchoor powder, rice flour).
Remove eggplant slices from water and make them dry.
Dip the eggplant slices into the above mixture and coat both sides of slices.
Heat 2tsps oil in pan and place slices on it.
Cook both sides of slices until golden brown over medium heat.
