Serves for 4.
1) 4-6 Colocasia Leaves
2) 1 Cup Besan (Chickpea flour)
3) 1 tsp rice flour
4) Salt as per taste
5) 4-5 green Chillies
6) 1 tsp Ginger Garlic past
7) 2tsp Cumin Seeds
8) 1 tsp Sesame seeds
9) ¼ cup Tamarind Pulp
10) 2 tsp jaggery
11) Oil
12) Salt as per taste
13) Grated Coconut ½ cup
Method:
In a mixing bowl add chickpea flour, ginger garlic,green
chiliies and coriander leaves paste, turmeric powder, sesame seeds, cumin seeds,
salt, tamarind pulp, jiggery and mix nicely.
Add water and make a thick sticky paste, it should be in the
middle and keep aside.
Wash, rinse and dry the leaves with a napkin.
Cut the excessive stems.
Take a largest leaf place it on flat surface and dark green side
down.
Apply the besan paste on it put the second leaf with the
opposite direction.
Apply the besan paste on second leaf.
Cover the leaf with the gram flour paste, now palce a third leaf
and apply the paste on this leaf too.
Now fold the broad side of leaf and put some more paste on it and start
making roll.
Make a tide roll.
Steam cooks these rolls for 10-15 minutes and let them cool down
completely.
Make slices and deep fry or shallow fry them.
Serve hot and garnish with grated coconut.
