Serves for 2.
Ingredients:
1) 2-3 Cup Leftover Rice
2) 1 Medium sized Onion finely chopped
3) Ginger garlic paste
4)
Turmeric Powder
5) Chopped Coriander Leaves
6) 1/4 tsp red chilly powder
7) Slices
of 1 small sized potato
8)
1/2 cup Peanuts
9) Salt to
taste
For Tempering:
1) 1 tsp Cumin Seeds
2) 7-8 Curry Leaves
3) 3 tbsp Oil
Method:
In a pan add oil,
cumin seeds and curry leaves.
Add the sliced onion, potato slices, peanuts and keep a lid and let it cook till potatoes get
boiled.
Add ginger garlic
paste, turmeric powder, red chili powder and saute for a 2-3
seconds.
Add rice, salt and mix
well.
Cover and let the rice
heat for about 5 minutes.
Garnish with coriander
leaves and serve it hot.
